World of Wine——Making wine

Wine production from grapes has similarities to other fermented beverages, such as beer, with the conversion of sugar to ethanol by yeast strains and various processes to make the beverage clear and stable.

 But it differs in many respects due to the nature of the product.

 Wines can be made from red or white grapes and may be still, varying from sweet to dry, sparkling or fortified.

 As you might imagine, there are many variations based on the choices that winemakers can make.

 And I'd love to cover every aspect of wine production, but in this particular course, we'll focus on the basics of red and white table wine, with some reference to rose and sparkling wine.

 Before we launch into the specifics of wine production after the grapes reach the winery, we're going to give you a chance to make your own virtual wine.

 In the following activity, you can choose to produce either a red or white wine from a selection of grape varieties, and make some critical decisions based on the fundamentals of wine-making, such as the region and ripeness of the grapes, the fermentation temperature, and whether the wine is matured in oak.

 At the end, your wine will be assessed visually according to wine show standards.

 It really doesn't matter if you already have a great knowledge of wine-making or none at all.

 This activity is designed to give us, and perhaps you as well, an idea of your base knowledge of the wine-making process.

 This exercise might also help you to understand the various steps involved in winemaking, but we hope you aren't disappointed if you don't make a gold medal winner.

 You'll get another chance to make virtual wine later on.

 Once you have completed the activity, you can share your result with everyone on the discussion forum and provide comments around where you went right or wrong.
